This Lemon Rhubarb Loaf is a perfect mix of sweet and tangy. In a bowl, whisk together: 1 ½ cups flour 1 tsp baking powder Pinch of salt Zest of 1 lemon In another bowl, mix: ½ cup melted butter ¾ cup sugar 2 eggs ¼ cup lemon juice 1 tsp vanilla Fold in 1 cup chopped rhubarb. Pour into a lined loaf pan and bake at 175°C (350°F) for 50–55 minutes.
